This May Bank Holiday, Parker’s Tavern will bring a touch of the deep south for a one-off collaboration with the purveyors of Cambridgeshire’s best burger. For two days, on Sunday 26th and Monday 27th May, 12-8pm, Higgsy’s will bring their award-winning burgers to Cambridge for an exclusive collaboration here on our doorstep.
The Peterborough-based burger shack, shot to fame last year when they were awarded the title of the ‘Best burger in Cambridgeshire’. Located in a layby between Yaxley and the A1, Higgsy’s is easily found due to their long queues. These see a legion of burger lovers travelling long distances, keen for a taste of their unapologetically indulgent US-styled smash burgers heaped with a side of loaded fries.
The collaboration will see the team from Higgsy’s pulling up outside Parker’s Tavern to serve their signature Redneck and Hillbilly smash burgers. The menu will be short and simple, with no compromises or substitutions. The team at Parker’s Tavern will serve drinks – wines, local beer and cocktails to pair with Higgsy’s signature creations. Located overlooking Parker’s Piece, one of the best-known open spaces in Cambridge, it’s the perfect spot to enjoy an outdoor lunch in the Spring Sunshine.

Our infamous Redneck burger is going to take the city by storm, just like it has locally since we opened our Hatch for the first time in 2022. We are buzzing to see everyone. For those unable to make it to the pop-up. The Higgsy’s Burger will also be available as part of the menu at Parker’s Tavern. Priced from £9 this will be available for one week only – from Tuesday 28th May until Sunday 2nd June.
